Yang Rou Pao Mo Xian Food

xian food yang rou pao moYang Rou Pao Mo is a type of mutton stew. Some People believe there are two things that you must do when you visit Xi`an: one thing is visiting the terra cotta warriors and another is to taste Yang Rou Pao Mo. It has become very popular as a dish for entertaining foreign visitors. In 1983, the dish was moved from the restaurant to the national banquet, and in 1993, Chinese traditional painting master Huang Zhou wrote an inscription mainly describes its appetizing taste. Because of this the Yang Rou Pao Mo becomes more and more famous. If you come here to taste it first, you do not eat too much because it is very filling.

Raw materials:
Fresh mutton 750g, flour 350g, yeast powder, agalic, yellow daylily, rice noodle, scallion, ginger, pepper, aniseed, caraway, chilli sauce, refined salt, monosodium glutamate.

How to make Yang rou pao mo:
1. Put agalic, yellow daylily and rice noodles into a laver, dip into cold water for half an hour.

2. Put fresh mutton into cold water, marinate for 30 minutes, and then cleanse it with clean water for several times.

3.Put mutton into a boiler, add boiling water into the boiler, boil it with big fire for 20 minutes. During this period, cast the blood foam out from the surface of the soup. After the blood foam is clean out, chop scallion into small pieces, do pepper and aniseed up with a piece a cloth, and then put into boiler, boil them with little fire for 2 hours.

4. Put flour and yeast powder into hot water, mix round into dough, and then cover it with a piece of cloth for 40 to 50 minutes until the dough is totally inflated.

5. Cleanse agaric, rip into small pieces. Clean yellow daylily up, and chop into small pieces, chop rice noodles, shallot and caraway into small pieces.(step 5)

6. Now, it's time to make cakes. Chop the dough into small cakes, and then knead, press and roll round. Bake a pan hot without oil. Then put cakes in, use toothpick to make 9 holes on both sides. Cover the pan. During this period, you need to turn over these cakes continually in order that do not singe these cakes. After they are baked well, take them out inder to cold down.(like Pic 4 step 6)

7. After the cake was cold, it's time to break them off with fingers and thumb.(like Pic 5 step 7)

8. Take meat out and chop into small pieces.(like Pic 6 step 8)

9. Put refined salt, monosodium in the bottom of a bowl, and then put agaric, yellow daylily and rice noodles in, on the top of these vegetables, put cake pieces on, and put meat on the top of cake pieces, and then, pour scalding mutton soup on them.

10. Put caraway and shallot in, now, a goluptious bowl of Yangroupaomo has been prepared.
